Keep offering different healthy things. I'd personally concentrate on vegetables and some fruits since he's eating pellets. My GCC loves corn cut off the cob.
Sprouting can be a good way to introduce fresh foods, especially to a seed eater. I sprout a mix of grains and legumes with sunflower seed and all 3 of my birds eat it readily.
Another tactic is to eat with your bird, show him that the foods are good! Don't give him anything out of your mouth, but show him what you are eating and then offer him some.
In general, unlike most things in life, with birds and food, if you keep doing the same things, sometimes they eventually decide they like it.
