You are in a much better position with her eating only pellets than if she ate only seeds! So you can afford to be patient. Things that sometimes work are eating the food in front of her and then offering some (but not any piece you've actually bitten, too many "people germs" lol), offering the food in different forms (big chunks, on a kabob thing (made for birds), tied to the cage bars, chopped very fine), making a mash or mixture of preferred food with the food you are trying to get her to eat, and just plain offering the same things over and over. Both of my birds have their preferences, but both have begun eating some foods after as long a lag as a year after I first started presenting them.
But pellets are as close as we have to a complete food for parrots, so if she has to be stuck on one thing, that's probably the best thing to be stuck on.
