Carrots are good! Actually orange veggies tend to have beta carotene which is a precursor for vitamin A. A and K are common vitamin deficiencies in birds. I feed carrots pretty much daily and also carrot tops when I have good ones.
With very few exceptions your bird can eat pretty much anything you would, in the form you would eat it. Alcohol, caffiene, chocolate and avocado are the main exceptions. Salt needs to be strictly minimized and dairy can cause problems, although small amounts of hard cheese or yogurt can be OK. The pits of stone fruits (cherries, apricots) are best avoided and mushrooms are risky (but only because most of what you buy in the grocery are already beginning to spoil -- it's not the mushroon, it's what grows on it).
Beyond that you're likely to find everyone has an opinion and actual data are few and far between.
