I remember when I got my GCC almost 13 years ago, the vet gave me an enrichment pamphlet from AAV (association of avian vets) which recommended offering parrots cooked chicken bones for them to crack open and eat the marrow. I don't know if they still recommend it, but I do let my GCC have a bone to gnaw on sometimes. I would avoid the wing though, the wingtip is so fatty. Mine is very happy getting a bone that has the meat eaten off, she will chew on the cartilage and last little bits of meat - more entertainment than food.
Fat is a necessary part of the diet, but too much animal fat is unnatural and probably unhealthy.
