sometime you should try a little can of the Peak powdered whole milk. Expensive unless you can find a West African market that has it more reasonably, but I love it for cooking creamy/custardy things. It tastes like thick, creamy Jersey/Guernsey cow milk. It makes a 1% or 2% milk with nonfat that tastes creamier than most whole milk powders.

For nonfat milk powder, I think Grandma's Country Cream is the best standard variety, but I've been buying organic nonfat and whole milk powder from Azure Farms for a while now and putting it up in mylar myself.

PS: Try just 36 g of the Ultra Gel to start--a tablespoon over 1/2 cup. I think that may actually be the golden number now I've gone back to weight.
