Instant (Cold Water) Butterscotch Pudding Mix

Playing around with my weighed ingredients in my measuring cups/spoons, the Ultra Gel actually is closer to 5/8 cup than 1/2 cup by volume to get a real pudding texture. (I hate cooking by measure--it's so easy to get too much variation in your ingredients.) I also have to say I like this even better made with whole milk powder instead of nonfat milk. (Nido powdered milk isn't hard to find if you want to try whole milk powder).

For those who have a kitchen scale, this is how it works by weight:

4 servings = 1 pkg Jell-O instant pudding

40 g Ultra Gel
45 g nonfat milk powder
or 60 g whole milk powder
67 g cane sugar (1/3 cup)
13 g molasses powder with maltodextrin
or 9 g freeze-dried molasses powder
10 g Augason Farms butter powder
11 g Ova Easy egg crystals
2 g vanilla powder (or your brand to equal 1/2 t vanilla)
2 cups/475 ml water

For 1 serving you would use 1/2 cup water and 47 g/1.66 ounces of pudding mix if using nonfat milk powder or 51 g/1.8 ounces if using whole milk powder. If you are leaving the milk out of your mix, then it would be 36 g/1.27 ounces
