The Instant/Quick Pudding Project

Instant Butterscotch Pudding Mix:
Nonfat milk powder to make 2 cups of milk (45 g--volume depends on brand of powdered milk used)
1/2 c Ultra Gel or 1/4 c Instant Clearjel
1/4 c to 1/3 cup cane sugar (adjust amount to taste, Jell-O uses 1/3 cup per box)
1 T blackstrap molasses powder made only with maltodextrin (Spices etc./Rainy Day Foods--do not use the "molasses powder" made with half wheat starch and a bunch of additives from Bulk Foods, etc.)
or 2 t freeze-dried pure blackstrap molasses (Prescribed for Life/Amazon)
2 T Augason Farms butter powder (available in #10 (3 lb coffee) cans at WalMart)
(N.B.--other brands are usually multi-chemical butter-flavor imitation butter powders--read labels!)
2 T OvaEasy egg crystals (Honeyville has the best price on their yearly 20% off sale, but still 35 cents/egg)
Generous pinch of sea salt.
1/2 t real vanilla powder (Emergency Essentials/Thrive Life for storage or in the baking aisle/Amazon).
(Some vanilla powders are strong, others just sugar with a whiff of vanilla scent. Find yourself a good, strong vanilla one.)
Blend above dry ingredients together well to make mix.
To make pudding, beat in:
2 cups cold water (or use 1/4 of mix in 1/2 cup water for a single serving)
Let sit 5 to 10 minutes to finish thickening.
