Fresh tomato and cucumber salad
Cut 2-3 fresh tomatoes into wedges. Peel and slice 1 large cucumber and peel and thinly slice 1 onion (also can add celery and green pepper if desired) -- Chelle note -- I have never put the celery in but I chop the green pepper VERY fine.
Combine 2 tablespoons oil. 3 tablespoons vinegar, 3 tablespoons sugar, and 1 teaspoon full salt. Pour over vegetables and refrigerate several hours or overnight.
Chelle note -- another thing that I have done, is add maybe 2-3 drops of tobacco sauce. If the tomatoes are really fresh, it just seems to enhance the flavor a bit.
