Salmon Cakes

My family doesn't like mayo. I found this recipe and it's the best I've ever made. I also added in some salt, pepper, and garlic.

15 oz salmon
2 TBSP butter
1 onion, chopped
1/2 cup Ritz crackers, crushed
2 eggs
1/4 cup parsley
1 tsp dry mustard

Cook onion in butter and let cool. Mix other ingredients in a bowl and add onion mixture. Chilling allows it firm up so shaping is much easier, about 2 hours. Crush more Ritz and coat cakes in crumbs. Brown in butter and olive oil.
