: Stuffed Green Pepper Soup in a Crockpot
: 1 lb. ground beef
: 1 env. dry onion soup mix
: 1 28 oz. can diced tomatoes
: 1 15 oz. can tomato sauce
: 1/2 c. uncooked white rice
: 2 lg. green bell peppers diced
: 1 can beef stock
: 1 soup can of water
: 1/8 c. packed brown sugar
: 2 tablespoons cider vinegar
: 2-4 shots of Worsestershire sauce
: Season and brown ground beef in skillet.
: In crockpot add all other ingredients, including the juice from the diced tomotoes. Add the ground beef. I cooked on high for a couple of hours and then set to low (once the rice was tender). I also sift out some of the onions from the dry soup mix because I don't like a lot of onions. It tastes just like stuffed green peppers and is great on a rainy day!
