: Sheila's Sour Cream Coffee Cake
: Preheat oven to 350 degrees
: Grease 5 3/4 x 9 3/4 Pan (Mom always used a Bundt Pan)
: Ingredients:
: 1/2 Cup Unsalted Butter - Softened at room temp.
: 3/4 Cup Sugar
: 2 eggs
: 1 Cup Sour Cream
: 1/4 Tspn Vanilla
: 1 1/2 Cups Cake Flour (i.e., Swan's Down)
: 2 Tspns Baking Powder
: 1 Tspn Baking Soda
: "pinch of salt"
: Topping:
: 3/4 Tbs Cinnamon
: 1/4 Cup Light Brown Sugar
: 1/3 Cup Peacans - Toasted and Chopped
: ------------------------------------------------
: Cream butter and sugar, add eggs, sour cream, vanilla, flour (in thirds), baking powder, baking soda, and salt.
: Pour half the batter into prepared pan; add half the topping; finish with rest of batter and topping. Bake 35-40 minutes.
