Sheila's Sour Cream Coffee Cake
Preheat oven to 350 degrees
Grease 5 3/4 x 9 3/4 Pan (Mom always used a Bundt Pan)
1/2 Cup Unsalted Butter - Softened at room temp.
3/4 Cup Sugar
2 eggs
1 Cup Sour Cream
1/4 Tspn Vanilla
1 1/2 Cups Cake Flour (i.e., Swan's Down)
2 Tspns Baking Powder
1 Tspn Baking Soda
"pinch of salt"
3/4 Tbs Cinnamon
1/4 Cup Light Brown Sugar
1/3 Cup Peacans - Toasted and Chopped
Cream butter and sugar, add eggs, sour cream, vanilla, flour (in thirds), baking powder, baking soda, and salt.
Pour half the batter into prepared pan; add half the topping; finish with rest of batter and topping. Bake 35-40 minutes.
