Preheat oven to 350.
3 8-oz pkg cream cheese
1 cup sugar
1/2 tsp vanilla or lemon or almond extract
Mix well with a mixer (or immersion mixer) and spoon into lined cupcake pans. Bake at 350 for about 40 minutes (ovens may vary)
Remove from oven and cool 5 minutes. Centers will sink a little bit.
Mix 1/2 cup sour cream and 1/4 cup sugar and put a spoonful into the sunken centers of the cupcakes. Then top with a teaspoon or so of any type jam.
Return to oven for 5 minutes.
These freeze really well in a ziplock bag.
