2 cups canned pumpkin
1 cup brown sugar
pumpkin spice to taste (1/2 to 1 tsp)
1/2 gallon vanilla ice cream
1 cup or more walnuts or pecans
graham cracker crumbs mixed with 2 Tb. sugar & 2 tsp of melted magarine
Boil pumpkin, sugar, and spice 1 minute, stirring constantly. Cool. Add ice cream which has been slightly softened. Place crumb mixture in bottom of a sprayed 9 x 13 cake pan and press down. Pour ice cream mixture over top. Top with walnuts or pecans. Sprinkle about 1/2 cup graham cracker crumbs on top. Freeze.
Cut into squares to serve. Serves 12-15 people.
This is SO much easier to make than pumpkin pie, and it's very tasty! Enjoy!
