you can either add diced ham or crumbled bacon to it before cooking, and then serve with scrambled eggs, toast or biscuits, and gravy.
I *love* to eat it for breakfast.
I think the difference in consistency is that after it sits for a while, some of the liquid reabsorbs into the hashbrowns, but it is one of those dishes that reheats well. It's a staple for us at Thanksgiving and Christmas.
