Heat oven to 350, grease (butter or oil) 9-1/2 inch pie pan, I use glass.

Saute in butter 1 slice of finely chopped onion and green pepper (more or less depending on your taste) and 2 tablespoons of RoTel drained (discard liquid) until everything is soft. Can add fresh ground pepper and salt at this time.

In a bowl, mix together (I use an immersion blender) about 1/3 of an 8-oz brick of cream cheese, 6-8 eggs. Spoon in the onion/pepper mixture after it has cooled a bit, and stir in a large handful of grated cheese (your favorite.)

Place slices of swiss cheese in the bottom of the greased pie plate, then add the egg mixture. I make a pretty pattern on top with whole slices of tomato or strings of string cheese. You can sprinkle with savory seasonings -- I use paprika.

Bake for about 30 minutes and let cool for little before cutting. Don't overcook.
