some awesome recipes I learned and cooked last night at a party:
Mexican chicken lasagna:
1/4 cup fresh cilantro
1 pkg cream cheese
2 cups shredded monterey jack cheese
1 medium onion (I would omit these b/c I felt it was a bit "onion-y)
1 28 oz. can enchilada sauce
10-12 corn tortillas
3 cups diced or shredded cooked chicken
Microwave cream cheese until very soft. Add cilantro and 1-1/2 cups of monterey jack cheese. Chop onion.
Spread 2/3 of enchilada sauce over bottom of casserole dish. Dip flour tortillas into remaining enchilada sauce and arrange in pan. Scoop spoonfuls of cream cheese mixture over tortillas, top with 1 cup chicken and 1/2 onion. Repeat layers until you finish off ingredients.
Top with remaining cheese and cilantro.
Now, they microwaved this in their stoneware baker. I don't have one of these, so I will be baking this. It was delicious!!!!
