I use finely chopped/sauteed onion, carrot and always garlic. Mash it up to almost a pulp in the food processor. This is probably why I need 2 eggs for the extra binding. I also use a mixture of oats (South Beach Diet trick) with my favorite seasoned bread crumbs. Also, the old fashioned shaped loaf pan is a must to keep it all together. :)
