Not exactly a main dish, but I love this stuff.
4 cups hot mashed sweet potatoes (or 1 large can mashed)
1/3 cup butter or margarine
2 T sugar
2 eggs, beaten
1/2 cup milk
Mix sweet potatoes and butter and sugar. Beat until light and creamy. Add eggs and milk, beat well and pour into a 2-quart casserole dish. Top with topping.
1/3 cup chopped pecans
1/3 cup coconut
1/3 cup brown sugar
2 T flour
2 T butter, melted
Combine pecans, coconut, brown sugar and flour. Stir in melted butter. Sprinkle over sweet potatoes and bake at 325 for 1 hour. Watch closely as the topping burns easily.
