2 cups cooked white rice (I only use rice cooked in a rice cooker as it turns out best).
The easiest way to do this rice is to use the Wal Mart or Sam's brand Southwestern Salsa in a jar (that gives you the black beans and tomato base).
Then add about a cup of diced pineapple to the mix.
That's all I do. You can also add red pepper flakes if you want to spice it up.
It's one of our favorite side dishes and very simple to make.
