1-1/2 c. all-purpose flour
3/4 c. white sugar
1/2 tsp. salt
2 tsp. baking powder
1/3 c. vegetable oil
1/3 c. milk
1 c. fresh blueberries (I have used frozen - thawed - and it works just fine).
1. Preheat oven to 400 degrees F. Grease muffin cups or line with muffin liners.
2. Combine 1-1/2 cups flower, 3/4 cups sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the eg and enough milk to fill to the 1-cup mark). Mix with flour mixture. Fold in blueberries. Fill muffin cups right to the top for 8, or about 3/4 way full for 10 (my choice).
3. Bake for about 20 minutes or until toothpick comes out clean.
