: : The pastor's wife presented this bread in her women's seminar a couple of weeks ago, and the bread is soooooooooooo yummy!!!! Warning: read ALL of the recipe, as more ingredients are in the glaze and drizzle.

: : ALMOND JOY BREAD

: : 4 eggs
: : 3/4 cup canola oil
: : 1 tsp vanilla
: : 3 cups flour
: : 1/2 tsp baking powder
: : 1 cup buttermilk
: : 1 cup coconut
: : 2 cups sugar
: : 1/4 cup melted butter
: : 1 tsp coconut extract
: : 1/2 tsp baking soda
: : 1/2 tsp salt
: : 1/2 cup almonds, chopped
: : 1 cup chocolate chips

: : Mix egge, oil, sugar, butter, vanilla & coconut extract together. In another bowl mix flour, baking soda, baking powder & salt. Alternate flour mixture with buttermilk, then fold in coconut, chocolate chips and almonds. Pour into two greased and floured loaf pans. Bake 1 hour at 350 degrees. When done put on a rack and poke several holes on top. Fill with coconut glaze. Drizzle with chocolate drizzle.

: : Coconut Glaze: Put 1 cup sugar, 1/2 cup water, 1 Tbs butter & 1 tsp coconut extract in a pan and boil for 1 minute. Pour into holes in bread.

: : Chocolate Drizzle: Put 8 oz of semisweet chocolate chips in a bowl. In a saucepan heat 3/4 cup heavy cream to a boil, pour over chocolates. Let sit 3 minutes and then stir until glossy.
