Impossible Cheesecake Pie
2/3 cup milk
2 teaspoonsful vanilla
1 cup sugar
1/2 cup Bisquick or other baking mix or pancake mix
2 packages (8 ounes each) cream cheese, cut into about 1/2 cubes and softened.
Heat oven to 350 degrees F. Grease a 9 or 9-1/2 inch pie plate. Place milk, vanilla, eggs, sugar, and baking mix in blender. COver and blend on high 15 seconds. Add cream cheese and blend on high 2 minutes. I usually drop the cubes in as the blender is running and blendd until smooth. Pour into pie plate. Bake until center is firm - 40-45 minutes. (Though it may take longer.) This puffs up and falls as it bakes. Cool.
Spread optional cheesecake topping over top. Garnish with fruit if desired.
Optional Cheesecake Topping: Mix 1 cup dairy sour cream, 2 Tablespoons sugar, and 2 teaspooons vanilla.
This is a dense cheesecake, like New York style. It is sooooo simple, and tastes so good. My youngest daughter makes this frequently, and says she is frequently asked by her DH's unit (he's in the Air Force) to make it for potlucks, along with her spicy macaraoni and cheese.
