1-1/2 to 2 lbs. yellow squash, sliced
1 large onion, chopped
2 carrots, grated
Cook the above until tender (boil). Mash together well and add:
1 can cream of chicken soup
8 oz. sour cream
1 pkg. Pepperidge Farm Herb Dressing (8 oz. crumb type)
Toss with 1 stick melted maragarine.
Fold 2/3 of the crumb mixture into the squash. Place in a 9 x 13 dish and sprinkle remaining crumb mix on top. Bake 350 for 40 minutes.
