Leek - Potatoe - Sausage Soup sm

I make this this way..you can adjust as you need

3 medium leeks - halved, then sliced thin in "half moons" including the light green part. Rinse and drain in collander - don't skin this step..their layers can harbor dirt

3 large baking potatoes peeled and cut into bit size pieces

1 tube Jimmy Dean original sausage..I have also used mild italian sausage 1 lb.

1 large can or a paper container of chicken broth

1 small bottle 1/2 and 1/2

I like to add couple cloves of garlic diced too.

Saute leeks and garlic in olive oil, add sausage and cook until browned breaking up into pieces. Add potatoes and broth. Simmer until potatoes are done. Turn off heat and add bottle of half and half while stirring. You can leave out the half and half if you want.
