Recipes for large families (5-8)

Broccoli Casserole

3 large heads of broccoli trimmed down.
2 cans Cream of Mushroom soup (or celery or chicken or mix).
1/2 C of milk
1-2 C grated cheddar cheese.
2 C Bisquick
1/2 C margarine

Cook broccoli and then place in 9 x 13 pan. Mix soup and milk until smooth and pour over broccoli. Sprinkle cheese over sauce. Mix Bisquic with margarine until crumbly and place on top. Back 20 minutes at 400.


Skillet Cappage

4 cups shredded cabbage
1 green pepper diced
2 C dicted celery
2 large onions sliced
2 tomatoes chopped or 16 oz can stewed tomatoes
1/4 cup bacon drippings
2 tsp granulated sugar.

Combine all and placed in large covered skillet (I use an electric one) Cook covered over moderate head about 30 minutes.


Potato Casserole (cheesy potatoes)

2 lb bag frozen hashbrowns (store brand seems to work best) thawed.
1 8 oz bag shredded cheddar
8 oz sour cream
2 cans cream of potato soup.
Parmesan cheese

Butter a 9 x 13 pan or Pam it. Combine all ingredients except Parmesan cheese thoroughlyand turn into pan. Smoothout and sprinkle Parmesan cheese on top. Bake at 350 for 45 min to 1 hour.

One Pot Pasta

2 16 oz cans stewed tomatoes
1 can 10-3/4 oz chicken broth
1-1/2 tsp italian seasoning
12 oz pkg spiral pasta.

Bring all ingrediants except pasta to a boil. Add pasta, covery and simmer about 16 minutes, stirring twice.


Many Way Meatballs

1 lb ground beef
1/2 c dry bread crumbs
1/4 minced onion
1 egg beaten
1/2 tsp salt
1 can cream of mushroom soup (or your choice of soup)
1 soup can water

Mix beef, bread crumbs, onion, and egg. Shape in to small meatballs. Brown meatballs and drain off drippings. Mix soup and water and pour over meatballs. Add any seasonings you like. Cook over low head 20-30 minutes stirring often. Serve over rice, noodles, mashed potatoes, toast.


Round steak in sauce

1 roung steak cut into bite size cubes
salt to taste
1 can cream of mushroom soup.
3 Tbsp catsup
2 tsp Worcestershire sauce
1 small onion minced

Brown beef with onions. Mix remaining ingredients and pour over beef. Simmer on stove stirring occasionally for about 30 minutes. Cna also cover and bake in over 1-1/2 houyrs at 350. Serve or noodles, rice, potatoes.
