My dad's spaghetti sauce

My dad lived in Italy for 2 years, and this is his take on authentic Italian sauce:

3 quarts stewed tomatoes (or fresh equivalent with skins removed)
2 cans tomato sauce (15 oz each)
4 cans tomato paste (6 oz each)
1 medium onion, chopped
10 garlic cloves, minced or pressed (can use dried minced garlic)
3 Tbsp olive oil
2 Tbsp sugar
1-1/2 Tbsp oregano
3 Tbsp parsley
2 tsp salt (add to taste)
1 tsp pepper (add to taste)

Combine tomatoes, sauce and paste in large saucepan. Over medium heat, bring to slow boil, stirring occasionally. Stir in remaining ingredients. Reduce heat to lowest setting. Let simmer at least 1 hour. Cooking longer improves flavor and breaks. Cool and freeze. Makes about 4 quarts of sauce.
