How about taco cups? I buy the refridgerator biscuits, turn a cupcake pan upside down, spray for Pam, and press biscuits around the bottoms to mold each cupcake. Bake until brown. I mix up taco meat, fill the cups and we top with whatever we want, usually lettuce, cheese, olives, tomatoes, sour cream, salsa.
Here's a hotdog casserole that's really easy and usually a hit, especially with kids.
1 lb. hotdogs sliced
1/2 cup chopping onion
1-1/2 cups milk
3/4 cup Bisquick
Grease a 9 x 13 pan. Layer hotdogs on the bottom, and onion. Beat milk, Bisquick and eggs until smooth. Pour into pan and sprinkle with cheese. Bake 400 for about 30 minutes until done. Serve with ketchup and mustard. I eat this for breakfast as well.
