How about meatloaf, mashed potatoes and a veggie and maybe even a box of brownie mix for dessert.

I'm not personally a fan of Hamburger Helper, but it makes a decent meal if you like it, rolls and a salad or a veggie.

Chili and cornbread. I actually make a broccoli bread with the Jiffy cornbread mix and it goes a lot further that way. Sometimes we eat the chili as nachos with a cheese sauce, tortilla chips, green onions, sour cream, etc., not expensive.
