I've put my changes in parentheses to the original recipe. It's originally called Sour Cream Coffee Cake. Even this basic recipe is delectable to me! : )
BANANA NUT COFFEE CAKE
Temp: 350 degrees F.
Prep Time: 5 mins Cook Time: 45 mins plus cooling about 15 mins.
Serves 12 (lol, supposedly! ;) )
Grease 8-inch square baking pan and set aside.
Combine and set aside:
1/2 c packed brown sugar
1/4 c chopped walnuts (I've used pecans, too)
2 tsp cinnamon
Combine well and set aside
1-3/4 c all-purpose flour (I sometimes use quick-cooking oats~~1-1/4 cups of AP flour plus 1/2 c of quick-cooking oats)
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
(sometimes I add a little extra dusting of cinnamon at this point)
1 c granulated sugar (personally, I've used as little as 3/4 cup for regular coffee cake w/ success; for banana coffee cake, I use about 1/2 cup)
1/4 c butter, softened
2 large egg whites
1 c reduced fat sour cream (I've used regular and not been disappointed)
(Had 1 large banana, mashed)
1 tsp vanilla extract
Place granulated sugar and butter in a large bowl; beat w/ a mixer at medium speed until well-blended, about 5 mins. Add egg whites, 1 at a time, beating well after each addition. Beat in sour cream, (and mashed banana, if you want banana), and vanilla extract. Gradually add flour mixture into sugar mixture; beat well. Spread half of the batter into the prepared pan. Sprinkle half of the walnut streusel over the batter. Dollop the rest of the batter on top of streusel, and top w/ remaining streusel.
Bake for 45 mins or until a toothpick comes out clean. Cool the cake on a wire rack.
