I made this for Easter dinner and it was a big hit. I wanted something different from the cheesy hash brown casserole or au gratin potatoes I usually make.
Mashed Potato Casserole
4 cups mashed potatoes - you can use instant if you want.
8 oz cream cheese, softened
8 oz carton onion dip (the prepared sour cream and onion dip you buy in a carton ... not onion soup mix).
3/4 cup milk
2 Tbsp butter or margarine
Mix the cream cheese, dip, milk and eggs together until blended. Stir in mashed potatoes. Put into greased 2 quart casserole. Dot the top wtih butter and bake in 350 degree oven for 35 to 45 minutes until set.
