Another way my in-laws make it is to cook it all in one pot, but they place a dab of bacon grease on the bottom (PA Dutcher's here!) of the stock pot, melt that, then add sliced potatoes and cover w/water, add your green beans and place your ham on top of them, pour a capful or 2 of AC vinegar over it, cover and let it cook on a simmer to low for 3-4 hours, the longer the better, but you do have to check it every now and then to add more water if necessary.
My mom and grandma always made it the way Ann Swer's mom has. It is great comfort food and makes the house smells deliciously yummy! s.
