My latest - Bacon Cheddar Quiche

pie shell - 9" deep dish

bacon - 6 or more slices

1-1/2 c cheddar cheese, shredded

green onions chopped (use to taste - I used two because I don't like a lot of onion).

3 large eggs

1 c 1/2 and 1/2

salt and pepper to taste


I use the store bought 9" deep dish pie shells that you bake. I bake the empty frozen shell according to package directions.

For the filling, I fried about 6 pieces of bacon but you could certainly add more to taste if you want. Fry crisp; crumble when cool.

In bottom of pie shell add 1 cup of shredded medium cheddar cheese, the crumbled bacon and the sliced green onions.

Next whisk together the three eggs, 1 c of 1/2 and 1/2, and salt and pepper to taste. Pour this mixture over the cheese/bacon/onions already in pie shell. Top that off with another 1/2 c of cheddar cheese. Bake in 375 degree oven for 30 minutes.

Delicious for breakfast, lunch or dinner!
