To me, this is kind of a cross between beef tips and Swiss steak.
Crock Pot Delight - from MichelleJ
1-1/2 lbs stew meat or round steak cut in strips.
1/3 cup flour
salt, pepper, and/or seasoned salt
1 16-ounce can stewed tomatoes (I prefer diced for this recipe)
4 ounce can mushrooms, drained
3 Tablespoons soy sauce
1 10-ounce package French style green beans (may omit)
Put meat, flour, and seasonings into plastic bag and shake to coat meat. Dump contents of bag into crock pot. Add remaining infredients, except green beans. Cook on high 1 hour, then on low 5-7 hours. Add green beans to top of mixture in the last hour of cooking. Serve over rice, noodles, or mashed potatoes.
When this cooks, it makes it own brown gravy, and it is done resembles beef tips with sauce.
You can easily double or triple it, too.
A couple minor comments from Carol -
I didn't drain the mushrooms. Figured the extra moisture wouldn't hurt.
The tomatoes I used were not labeled 'stewed', but were just the "petite diced tomatoes in rich juice" (S&W brand). I don't care for the tomatoes labeled "stewed" because they're seasoned or have peppers in them or something.
I also used 2/3 low sodium soy sauce instead of all regular soy sauce. Next time, I'll either use more salt or use just 1/3 low sodium soy sauce - just to cut the sodium contant, but then I felt it needed more salt. DH, however, didn't think it needed more salt.
