Garbanzo Bean Stir Fry
2 Tablespoons Olive Oil
1 Tablespoon chopped fresh Oregano
1 Tablespoon chopped Fresh Basil
1 clove garlic crushed (I used minced and 1 teaspoon)
1 can (15 oz) garbanzo beans
1 zucchini, halved and sliced
1/2 cup sliced portabello mushrooms (may substitute sliced firm tofu here)
1 red onion, chunked
1 red pepper sliced
1 tbsp. soy sauce
1-2 plum tomatoes chopped
1. Heat oil in large skillet over medium heat. Stir in all the spices, add the garbanzo beans and zucchini. Stir well to coat veggies with the spices. Cook covered for 10 minutes stirring occasionally.
2. Stir in mushroomsand cook until tender, or substitute tofu, stirring occasionally. Add soy sauce, and stir to coat. Place the chopped tomato on top of the mixture. Cover and let the tomatoes steam fora few minutes, but don't let them get mushy. Serve immediately.
