1/4 cup butter or margarine
3/4 cup brown sugar
1/4 teaspoon baking soda
1/2 teaspoon each cinnamon, cloves, allspice
dash of nutmeg
1 cup chopped mixed candied fruit and peels
1 cup raisins
1 to 1-1/2 cups chopped pecans
1/4 cup evaporated milk
1 teaspoon lemon juice
1 cup all-purpose flour, divided
1/4 teaspoon salt
Add sugar to butter a little at a time and beat until fluffy, beat in egg.
Combine milk and lemon juice, gradually add to creamed mixture.
Reserve 1/4 cup flour.
Sift remaining flour with soda, salt, and spices, stir into creamed mixture. Mix reserved flour with fruit and pecans, blend into dough.
Drop by teaspoon on lightly greased cookie sheet (I use parchment paper). Bake at 375 for 10-12 minutes (lower heat with gas oven).
I don't have a quantity on this, but it makes a bunch. Other than the candied fruit and pecans it is pretty inexpensive to make if you want to make for gifts or to share. I double my batch. I buy my candied fruit at Sam's and the big container is often as cheap as the small containers at Wal-Mart.
This is a chewy cookie. Be sure and let cool before putting away or they will stick to each other.
