8 eggs or equivalent egg beaters (I used 8 whites, 6 yolks)
2/3 cup low-fat milk
1 lb sausage or bacon cooked and crumbled (I used turkey sausage)
1/2 cup Bisquick
1 can Rotel diced tomatoes & green chilies drained
1 small can mushrooms, drained
1/2 cup chopped onion, sauteed (cooked mine with sausage)
1 cup shredded cheese (I used fat free.)
Beat eggs, add milk, whisk in Bisquick then combine with other ingredients.
Spray casserole dish with nonstick spray and bake at 350 degrees until set, approximately 30 minutes depending on size of pan. If casserole is thick, it takes longer; thin takes less time.
I served this with buttermilk biscuits and diced sweet potatoes browned in olive oil. You could also serve it with salad.
