Sublime's barley casserole

Note, I have made the version below, but now we leave out the carrot and corn and put in fresh zucchini and a can of diced tomatoes (drained) - both at the end before cooking 15 mins more. When you serve a portion, sprinkle some parm cheese on it. Very good. You can use any kind of broth, spices, add meat, etc.

Corn and barley casserole

3 garlic cloves, minced
1 c chopped onion
2/3 c chopped carrots
1 TBS healthy oil
3 c chicken broth
1 c regular pearl barley
1/4 tsp salt, optional
1/8 tsp pepper
2 cups frozen corn, thawed
1/2 c chopped fresh parsley (or 1/4 dried)

In a skillet over medium heat, saute the garlic, onion and carrots in oil until tender. Transfer to a greased 2-qt baking dish; add broth, barley, salt if desired and pepper. Mix well. Cover and bake at 350'F for
