1 pkg (10 oz) frozen chopped broccoli
½ cup chopped onion
1 Tbsp butter or margarine
½ teasp salt
¼ teasp pepper
2 cups milk
2 eggs, slightly beaten
2 cups cooked long grain brown rice (or white rice) (5/8 cup uncooked makes 2 cups)
1½ cups grated sharp cheese (6 oz.)
Cook broccoli; drain thoroughly.
Saute onion in butter.
Starting with 1½ cups milk, mix everything together and pour into a butter 1½ quart casserole. If there’s room, pour in the rest of the milk.
Bake at 325 degrees F for about 1 hour and 15 minutes, or until custard is set (knife comes out clean).
Makes 8 servings.
To cut down on fat, I skip sauteing the onion and leave out the butter and use 2% milk. I usually use dehydrated onions (about 1/4 cup).
We like sliced cooked carrots with this for dinner.
My DD who dislikes broccoli even likes this and asks for it from time to time. This actually was enough for 6 of us.
