I think I'm going to try doing that with my chicken fajitas - make them up and freeze them. So many times I'm in the mood to have one and it would be great to just pop one in the micro or oven.
: Cook 1 lb sausage (your favorite kind).
: In another pan, scramble 6-8 eggs.
: Let sausage cool until it can be handled, then stir in scramled eggs.
: In a burrito sized tortilla, place a slice of cheese (I like muenster), then then add sausage/egg mixture (as much as you would like.)
: Roll up the burrito, then roll in waxed paper in a similar burrito roll fashion.
: Place the waxed paper covered burritos in a zpilock, and place in the freezer.
: When you want one, just place in the microwave (still covered in the waxed paper) for a minute or two.
: Can use any type of sausage or cheese.
: Makes a good snack, too.
: Makes 6-8 burritos, depending on how much filling you use in each.
