Hi Dan, I purchased a copy of the 1871 census from the New Brunswick Provincial Archives. I checked for Joseph and Agnes on this census and found them and their little family living in Grand Falls.
Joseph, male, age 45 born Quebec, RCatholic, French, farmer
Agnes, female, age 28 born USA, RC, French
George, male, age 8, born Quebec, RC
Josephine, female, age 5 born N.B., RC
Clorindy, female, age 2, born N.B., RC
Ann, female, age 8 mos, born N.B., RC
I find Joseph on the 1861 Grand Falls census. At this time he's single, age 40, canadian RC, farmer
Also found a baptism records on Ancestry:
Francis Anne Paris - Baptised Aug 21, 1870 - aged 6 weeks old, legitimate child of Joseph Paris & Agnes Scythes. Sponsors: Edward McQuaide & Elizabeth Beaumaster.
