If your GCC is eating a lot of seed you dont want to switch to pellets too quickly. It can take awhile for them to accept new foods.
As for storing pellets, the fridge isnt really the best. The reason is, when you take the container out each day, some water will condense on the cold food and eventually you can get a little mold growing on the food (especially with preservative free food like harrisons).
It's better to keep it frozen and keep a week or two worth in a sealed container at room temp.
