We've nearly always done the cage method for bad bites when our guy was younger, although sometimes when it wasn't too bad we would ladder him instead. (step up, step up, etc, to show that you're in control).
Any chance that you're accidentally hitting any pin feathers? The only time ours really bites now is when we hurt him unintentionally.
