I started out with one (very extra quiet) conure. Recently (2 years later) I got a second GCC. I have not noticed any change whatsoever in noise level. Each bird does their own thing (my 2nd GCC is also quiet). They don't talk to each other at all. I've had the two birds for about 6 weeks now. Unfortunately they don't like each other so I can't house them together. For the first 30 days I kept them in separate rooms of the house for quarantine. Since then I've kept their cages next to each other so they can keep themselves company. I'm hoping they'll eventually like each other. When it's time to come out of the cages they'll play near each other but if they get closer than 1" they'll start to fight. One will sit on one shoulder and the other on my other shoulder. It can be chaotic at times because if one is startled by a noise and flies off, the other will, too. It's like crazy helicopters in the house. With two you have to be extra, extra careful to know where they both are at every moment so they don't get into trouble.
