I use a ceramic-coated cast iron skillet for frying. It is gentler on my glass cooktop than regular cast iron. I've tried stainless steel frying pans but they are useless! Everything sticks terribly.
I still use teflon on a very limited basis but watch it like a hawk and put my birds in a cage next to an open (screened) window on the other side of the house while I'm cooking, and open the kitchen windows for more ventilation.
