I use cast iron skillets. Once they're 'seasoned' properly they can be used just like a non-stick skillet.
NEVER wash it with soap (except if it's brand new). Heat it on high, add vegetable oil and rub it in with a paper towel. Wipe out excess. it takes a little while to season it properly but once it's done it's a great piece of cookware.
To clean it, just run hot water and use a green scrubbie to remove any debris. Always dry the pan and do the oil thing.
