What you describe is "territoriality." My conure is very territorial and will bite me if I stick my hand in or near his cage, but if I "warn" him beforehand, tell him to have a "gentle beak," and move slowly, he will often restrain himself from biting. Still, I use a wooden perch to avoid being bitten near his cage. I have read that having a separate sleeping cage can help make them less territorial, but I have not seen much difference when I've put him up for the night in his other, smaller cage. If anything, he just gets territorial around THAT one, too. I accept that my conure is territorial and fetch and retrieve him near his cage with a wooden perch. We're both happier that way.
