Chicken Fajita Casserole
1 package red beans and rice mix
1 can (4 oz) sliced olives, drained
1 can (4 oz) diced green chilis
3 chicken breasts cut into strips (or about 8 tenders)
2 cups boiling water
1 can (14 oz) diced tomatoes
Monterey Jack cheese
Crushed tortilla chips
Place red beans and rice in 13x9x2 baking dish; top with olives and chilis. Place chicken in baking dish. Combine water and tomatoes and pour over chicken. Cover and bake for 45 minutes at 350. Uncover, sprinkle with cheese and tortilla chips and bake uncovered 5 minutes longer or until rick and chicken are cooked and cheese is melted.
If you want to freeze this, it works really well... Just use cold water instead of boiling, place all in a freezer bag until ready for use, then thaw and cook following cooking directions. This is yummy and one of our family favorites!
