: As for the chicken thighs, chicken and dumplings are good or homemade chicken pie my way LOL. I use a biscuit topping rather than pie crust or sometimes skip the bread and serve it over rice. I usually use 5-10 pounds of chicken, so the gravy might need to be reduced if making a smaller batch...
: Simmer the chicken in water till done, save about 3 cups of the broth. debone remove skin and fat, shred the chicken and set aside.
: In a large pot over med-high melt 1/3 cup butter, stir in 1/3 cup flour and pepper to taste. mix and stir till bubbly. Add in the broth slowly, stirring (or using a whisk) to dissolve the flour/butter mixture. Stir in about 1/4-1/2 cup of milk to thin it out a bit. Bring to a boil, stirring constantly and cook for 1 minute. Add in shredded chicken and vegetables (froze or canned) of choice. Cook till vegetables are heated.
: Now, you can either eat as a stew like that, serve over rice, or pour in a 9 x 13 baking pan and top with biscuit topping (see below) and bake for about 10-12 minutes at 425.
: biscuit topping:
: 2 cups self-rising flour
: 1/2-3/4 cups milk
: 1/4 cup vegetable oil
: mix, turn out on floured surface and knead a few times. Roll out into a 9 x 13 rectangle. Fold in half and half again to make it easy to place on the pan. Place on top of above chicken mixture and unfold dough. Bake at 425 for 10-12 minutes or until golden brown.
: Another way I fix chicken thighs is with Italian dressing...marinade them in the dressing and bake (with extra dressing in the pan with them) till done. Serve over rice.
: DH likes to cut them up and make homemade nuggets with them.
: You can also sprinkle some pepper and garlic on them, top with a slice or two of bacon and then put a few mushroom slices on top of that and bake with a dab of butter in the pan at 350-425 for about 45 min to an hour (depending on your oven, mine takes closer to an hour at 425). Serve with rice and broccoli (or your choice of sides).
